Meat & Vegetable Omelet
4 large eggs
1 cup onion - chopped
1/2 cup red bell peppers - chopped
1/2 cup green bell peppers - chopped
1/2 cup cooked ham - diced
8 slices bacon - cooked and crumbled
2 Tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
a couple drops drops of your favorite hot sauce (optional)

1. Melt butter in a large skillet or on a griddle.
2. Saute onion, bell pepper, ham and bacon in the butter until the onion starts to become translucent.
3. In a small bowl, whip the eggs lightly. Add salt and pepper and hot sauce if desired.
4. Slowly, stir the eggs into mixture in skillet. Lightly brown on one side. Turn over and lightly brown other side.



Garlic Toast
8 tablespoons (1 stick) unsalted butter
2 tablespoons olive oil
5 cloves garlic, minced
1/2 teaspoon dried parsley (optional)
1/2 teaspoon dried garlic
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 loaf soft white bread (14-inch, 12 ounces)

1. Arrange a rack in the middle of oven, place a rimmed baking sheet on the rack to preheat, and heat the oven to 375°F.
2. Melt the butter in a medium microwave-safe bowl until completely melted, about 1 minute. Add the olive oil, minced garlic, parsley, garlic powder, salt, and pepper and stir to combine. Set aside while you slice the bread.
3. If unsliced, slice the bread into 1-inch-thick slices. Use a pastry or basting brush to coat both sides of each slice with the garlic butter.
4. Place the bread on the preheated baking sheet in a single layer. Bake until golden-brown, about 12 minutes. Serve warm



Casserole Cookies
2 eggs
1 c. sugar
1/4 c. brown sugar
1 1/2 c. flaked coconut
1 c. almonds, chopped
1 c. dates, chopped
3 tbs. oats
1 tsp. nutmeg
1 1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. vanilla
1/2 tsp. almond extract
additional sugar

1. In a bowl, beat eggs until lemon-colored. Gradually beat in sugar. Beat in extracts and spices. Sir in remaining ingredients. Pour into an ungreased deep casserole dish.
2. Bake at 350° for 30-35 minutes. Remove from oven; stir with a wooden spoon (batter will appear moist and sticky). Place baking dish on a wire rack. When cool enough to handle, roll batter into 1-in. balls. Roll in sugar; place on wax paper-lined baking sheets.



Vodka Cranberry
1 1/2 fluid ounces vodka
5 fluid ounces cranberry juice
1 cup ice cubes
1 lime wedge for garnish (optional)

1. Pour vodka and cranberry juice into a highball glass filled with ice; stir well.
2. Garnish with a lime wedge.
